That is because the crust is actually that part of the bread closest to the heat and so bakes the most.However, there are ways to soften the crust so they don't bother you as much. For instance, you can brush the loaves with melted butter before placing them in the oven. brushing with milk will work also. Do the same when you remove them from the oven and then store the loaves in a plastic bag. All of these things will soften the crust. BTW, I have the discussions with my wife.
